Ingredients

  • 1 cup brown sugar
  • 1 cup granulated sugar
  • 2 large eggs
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon vanilla extract
  • 1 cup chopped pecans
  • 1 cup toffee bits

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, cream together the butter, brown sugar, and granulated sugar until light and fluffy.
  3. Add the eggs and vanilla extract, mixing until smooth.
  4. In a separate bowl, whisk together the flour and baking soda, then gradually mix into the wet ingredients until just combined.
  5. Fold in the chopped pecans and toffee bits carefully.
  6. Scoop small balls of dough onto a baking sheet lined with parchment paper, spacing them 2 inches apart.
  7. Bake for 10-12 minutes until the edges are golden brown.
  8. Allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
