Ingredients

  • 45 medium fresh yellow squash (and zucchini)
  • 1 medium onion
  • 8 ounces cream cheese or sour cream
  • 1 cup shredded cheddar cheese
  • 1 cup breadcrumbs
  • 1 egg
  • 2 tablespoons butter
  • Salt and pepper to taste

Instructions

  1. Prepare the squash: Wash and slice the yellow squash and zucchini into thin rounds. Set aside.
  2. Sauté the onion: In a skillet over medium heat, melt 2 tablespoons of butter. Add chopped onion and sauté until translucent, about 3-4 minutes.
  3. Boil the squash: In a large pot, bring salted water to a boil. Add the sliced squash and cook for about 5 minutes until tender yet firm. Drain and cool slightly.
  4. Combine ingredients: In a large mixing bowl, combine sautéed onion, boiled squash, cream cheese (or sour cream), cheddar cheese, and beaten egg. Season with salt and pepper, and mix thoroughly.
  5. Transfer to baking dish: Preheat oven to 350°F (175°C). Pour mixture into a greased 2-quart baking dish.
  6. Prepare the topping: Mix breadcrumbs with a tablespoon of melted butter and sprinkle over the casserole.
  7. Bake: Place casserole in the oven and bake for about 25-30 minutes until golden brown and bubbling. Let cool for a few minutes before serving.

Notes

You can assemble this dish a day in advance and store it in the refrigerator before baking. Use flavored cheeses or add herbs for variation.
