  • 1 cup sugar (brown or white)
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground nutmeg
  • 1/2 teaspoon salt
  • 1 cup water
  • 1/3 cup vegetable oil
  • 1 cup raisins or currants (optional)
  • 1/2 cup chopped nuts (optional)

Instructions

  1. Grease the slow cooker with cooking spray or butter.
  2. In a large bowl, mix together the flour, sugar, baking soda, cinnamon, nutmeg, and salt until well combined.
  3. Stir in water and vegetable oil until the mixture is just combined. If using, fold in the raisins and nuts.
  4. Transfer the batter to the greased slow cooker, smoothing the top with a spatula.
  5. Cover and cook on low for about 120 to 150 minutes or until a toothpick inserted in the center comes out clean.
  6. Once cooked, unplug the slow cooker and let the cake cool for 10-15 minutes before removing.
