Ingredients

  • 1 cup cornmeal (preferably stone-ground)
  • 1 teaspoon salt
  • 1 cup boiling water
  • Optional: 1 teaspoon baking powder
  • Cooking oil (for frying)

Instructions

  1. In a large bowl, combine the cornmeal and salt (and baking powder if using). Mix well.
  2. Pour the boiling water into the dry mixture. Stir quickly until you have a thick batter.
  3. Allow the batter to sit for about 5 minutes to thicken up.
  4. In a skillet, heat about 1/4 inch of oil over medium heat until shimmering.
  5. Form the batter into small patties and carefully place them into the hot oil. Fry for about 3-4 minutes on each side or until golden brown.
  6. Remove the cornbread patties from the skillet and place them on paper towels to drain excess oil.
  7. Enjoy your hot water cornbread warm with your favorite sides!

Notes

This recipe can easily be doubled for larger gatherings. To keep leftovers fresh, store them in an airtight container.
