  • 4 cups fresh peaches, peeled and sliced
  • 1 cup granulated sugar
  • 1 teaspoon cinnamon (optional)
  • 1 tablespoon lemon juice
  • 1 cup all-purpose flour
  • 2 teaspoons baking powder
  • 1 cup milk
  • ½ cup unsalted butter, melted
  • Pinch of salt
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, combine the sliced peaches, ½ cup of sugar, cinnamon, and lemon juice. Let sit for about 10 minutes to macerate.
  3. In another bowl, whisk together flour, baking powder, remaining sugar, and salt.
  4. Stir in the milk and vanilla extract into the dry ingredients until well combined.
  5. Pour the batter into a greased 9×13 inch baking dish. Spoon the peach mixture evenly over the batter (do not stir).
  6. Drizzle the melted butter over the top.
  7. Place in the oven and bake for 40-45 minutes until the top is golden brown and a toothpick comes out clean.
