  • 1 lb chicken breast – boneless and skinless, cut into bite-sized pieces
  • 1 cup uncooked orzo
  • 1 can (15 oz) diced tomatoes – don’t drain
  • 1 cup chicken broth – low-sodium
  • 1 cup bell peppers – chopped
  • 1 cup Monterey Jack cheese – shredded
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp paprika
  • Salt and pepper to taste
  • Olive oil – for sautéing

Instructions

  1. Prepare the Ingredients: Gather and chop all ingredients to have them ready for cooking.
  2. Sauté the Chicken: In a large skillet over medium heat, drizzle olive oil and add the chicken pieces. Cook until browned, about 5 minutes.
  3. Add Spices and Veggies: Add garlic powder, onion powder, paprika, bell peppers, salt, and pepper. Sauté for another 3–4 minutes until the peppers are tender.
  4. Mix in the Orzo and Liquids: Stir in the uncooked orzo, diced tomatoes (with juice), and chicken broth.
  5. Simmer: Bring the mixture to a gentle boil, then reduce the heat to low. Cover and let it simmer for about 15 minutes, or until the orzo is cooked and has absorbed most of the liquid.
  6. Add Cheese and Finish Cooking: Remove the lid, sprinkle cheese over the top, cover again, and let it melt for about 2–3 minutes.
  7. Serve: Fluff the dish with a fork and enjoy warm with your favorite sides!

Notes
