Ingredients

  • 46 bone-in chicken thighs or breasts
  • 23 medium onions, sliced into thin rings
  • 1 packet onion soup mix
  • 1 cup low-sodium chicken broth
  • 1 tablespoon olive oil
  • 1 cup shredded cheese (Gruyère or mozzarella)
  • Salt and black pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C) and prepare a 9×13 inch baking dish.
  2. Season chicken with salt and black pepper, then set aside.
  3. Sauté sliced onions in olive oil over medium heat until soft and translucent, about 8-10 minutes.
  4. In a large bowl, mix sautéed onions, onion soup mix, and chicken broth until blended.
  5. Pour the onion mixture over the chicken in the baking dish and top with shredded cheese.
  6. Cover with aluminum foil and bake for 30 minutes, then uncover and bake for an additional 20 minutes until cheese is golden and bubbly.
  7. Let rest for a few minutes before serving.

Notes

For best results, don’t overcrowd the baking dish and allow the chicken to rest before serving.
