Ingredients

  • 1 pound of breakfast sausage
  • 12 ounces of pancake mix
  • 2 cups of milk
  • 3 large eggs
  • 1/2 cup of maple syrup
  • Butter for greasing
  • Optional toppings (fresh fruit, whipped cream, extra syrup)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a skillet over medium heat, crumble and cook the sausage until browned and cooked through, about 5-7 minutes.
  3. In a large bowl, combine the pancake mix, milk, eggs, and maple syrup; whisk until just combined.
  4. Grease your baking dish with butter. Pour half of the pancake batter into the dish, sprinkle the cooked sausage on top, and pour the remaining batter over.
  5. Bake for 25-30 minutes until golden and a toothpick comes out clean.
  6. Allow to rest for 5-10 minutes before serving warm with additional syrup or toppings as desired.

Notes

This casserole can be made ahead of time and is kid-approved! Serve it with fresh fruit salad or crispy bacon for a complete meal.
