Ingredients

  • 1 cup panko breadcrumbs
  • ½ cup all-purpose flour
  • ½ cup sugar
  • ½ cup unsalted butter, softened
  • 1 large egg
  • 1 tsp vanilla extract
  • ½ tsp baking powder
  • Pinch of salt

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a bowl, combine the panko breadcrumbs, flour, sugar, baking powder, and salt. Set aside.
  3. In another bowl, beat the softened butter until light and fluffy (about 2-3 minutes).
  4. Mix in the egg and vanilla extract until fully incorporated.
  5. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  6. Using a cookie scoop or tablespoon, drop generous portions onto the prepared baking sheet, spacing them about 2 inches apart.
  7. Bake for 12-15 minutes, or until the edges are golden brown. Allow to cool on the baking sheet for a few minutes before transferring to a wire rack.
