Ingredients

  • 4 medium apples, peeled and chopped
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, melted
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 ½ cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • Optional: 1/2 cup chopped nuts (pecans or walnuts)

Instructions

  1. Grease the slow cooker insert lightly with non-stick spray or line with parchment paper.
  2. In a large bowl, whisk together the melted butter, sugar, eggs, and vanilla until smooth.
  3. In another bowl, mix the flour, baking powder, cinnamon, and salt.
  4. Gradually add the dry ingredients to the wet mixture, stirring until just combined. Be careful not to overmix!
  5. Gently fold the chopped apples (and nuts, if using) into the batter.
  6. Transfer the batter to the prepared slow cooker and cover it with the lid.
  7. Cook on low for 4–5 hours or until a toothpick inserted in the center comes out clean.

Notes

Feel free to add nutmeg or ginger for additional flavor. For serving, pair it with vanilla ice cream or whipped cream.
