Ingredients

  • 1 tbsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1/2 cup unsalted butter (cold, cubed)
  • 1 cup buttermilk
  • 1 cup fresh peaches (peeled and diced)
  • 1/4 cup sugar (optional)

Instructions

  1. Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, combine the flour, baking powder, baking soda, and salt.
  3. Cut in the cold butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs.
  4. Fold in the buttermilk and diced peaches until just combined; be careful not to overmix.
  5. Turn the dough out onto a lightly floured surface and gently knead it 2-3 times to bring it together.
  6. Pat the dough into a rectangle about 1-inch thick and cut into rounds using a biscuit cutter or a glass.
  7. Place the biscuits on the prepared baking sheet and bake for 12-15 minutes, or until golden brown.

Notes

Keep your butter cold for flakier biscuits. Store leftovers in an airtight container for up to 3 days.
