  • 1 cup unsalted butter, softened
  • 1 cup brown sugar, packed
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/2 teaspoon salt
  • 1 cup fresh peaches, peeled and diced (or canned, drained)
  • Optional: 1/2 cup chopped pecans or walnuts

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy. Beat in the eggs and vanilla extract until smooth.
  3. In another bowl, whisk together flour, baking soda, cinnamon, and salt.
  4. Gradually add the dry mixture to the wet ingredients, stirring until just combined. Do not overmix!
  5. Gently fold in the diced peaches (and optional nuts) until evenly distributed.
  6. Drop rounded tablespoons of dough onto a greased or parchment-lined baking sheet, spacing them about 2 inches apart.
  7. Bake for 10-12 minutes or until the edges are lightly golden. Let cool on the baking sheet for a few minutes before transferring to a wire rack.

Notes

For best results, use a silicone baking mat or parchment paper to prevent sticking. Store cookies in an airtight container for up to 5 days.
