Ingredients

  • 1 package of frozen puff pastry, thawed
  • 2 cups fresh peaches, sliced or diced
  • 1/3 cup brown sugar
  • 1 teaspoon cinnamon
  • 1 egg (for egg wash)
  • Vanilla ice cream (optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Roll out the thawed puff pastry on a floured surface until it’s about 1/4 inch thick.
  3. In a bowl, combine sliced peaches, brown sugar, and cinnamon. Mix well until peaches are coated.
  4. Spoon the peach mixture onto the center of your pastry. Fold the edges over to form a ring, sealing the edges well.
  5. Beat the egg and brush it over the pastry ring for a golden finish.
  6. Place on a baking sheet lined with parchment paper and bake for 25-30 minutes, or until golden and puffed up.
  7. Let it cool slightly before serving. Drizzle with vanilla icing or serve with a scoop of ice cream.

Notes

Store leftovers in an airtight container in the fridge for up to three days. Adjust cooking time if using an air fryer.
