Ingredients

Scale
  • 1 cup creamy peanut butter
  • 1 ripe banana, mashed
  • 1 cup brown sugar, packed
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1 cup all-purpose flour
  • 1 cup chocolate chips, semi-sweet or dark
  • A pinch of salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, combine the peanut butter, mashed banana, brown sugar, egg, and vanilla extract. Mix well until smooth and creamy.
  3. In a separate bowl, whisk together the baking soda, flour, and salt.
  4. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  5. Fold in the chocolate chips.
  6. Scoop tablespoon-sized portions of dough onto a baking sheet lined with parchment paper.
  7. Bake for 10-12 minutes, or until the cookies are golden around the edges.
  8. Let them cool on the pan for a few minutes before transferring to a wire rack to cool completely.

Notes

Use very ripe bananas for the best flavor and moisture. Consider chilling the dough for thicker cookies.
