Ingredients

  • 13/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon table salt
  • 1/2 cup unsalted butter, room temperature
  • 1/2 cup granulated sugar
  • 1/4 cup granulated sugar (extra for rolling)
  • 1/2 cup light brown sugar, lightly packed
  • 3/4 cup smooth peanut butter
  • 2 tablespoons milk
  • 1 teaspoon vanilla extract
  • 1 large egg
  • 40 to 42 milk chocolate kisses, unwrapped

Instructions

  1. In a bowl, whisk together the flour, baking soda, and salt. Set this aside.
  2. In the bowl of a stand mixer, beat the butter until smooth and creamy.
  3. Add in the granulated sugar and light brown sugar and cream until light and fluffy.
  4. Mix in the peanut butter until fully combined.
  5. Beat in the milk, vanilla extract, and egg until well incorporated.
  6. Gradually add the flour mixture and mix until a stiff dough forms. Cover and refrigerate for 30 to 60 minutes.
  7. Preheat the oven to 375°F. Place the extra granulated sugar in a shallow bowl.
  8. Scoop the dough into 1-1/4 inch portions, roll into balls, and coat in granulated sugar. Place on ungreased baking sheets.
  9. Bake for 8 to 10 minutes until set and lightly browned.
  10. Once out of the oven, gently press a chocolate kiss into the center of each cookie.
  11. Cool on the baking sheet for about 5 minutes before transferring to a wire rack to cool completely.

Notes

For best results, use room temperature butter before creaming. The dough can be refrigerated overnight for quicker baking.
