Ingredients

  • 1 cup pecans
  • 1 cup shredded cheese
  • 1 cup mixed veggies (e.g., carrots, bell peppers, spinach)
  • 1/2 cup breadcrumbs
  • 1 egg (or flax egg)
  • 1 teaspoon garlic powder
  • Salt and pepper to taste

Instructions

  1. Toast the pecans in a dry skillet over medium heat for about 5 minutes until fragrant.
  2. Finely chop the fresh vegetables or pulse them in a food processor.
  3. In a mixing bowl, combine toasted pecans, shredded cheese, chopped veggies, breadcrumbs, egg (or flax egg), garlic powder, salt, and pepper.
  4. Shape the mixture into patties about 1 inch thick.
  5. Heat oil in a skillet and cook patties for about 4-5 minutes on each side until golden brown.
  6. For baking, preheat the oven to 375°F (190°C) and bake on a lined baking sheet for 20-25 minutes.
  7. Serve warm with your favorite dipping sauce or salad.
