Ingredients

  • 1/2 cup granulated sugar
  • 1/2 cup light brown sugar, packed
  • 1/4 cup milk (or non-dairy alternative)
  • 1 teaspoon vanilla extract
  • 3 cups old-fashioned rolled oats
  • 2 cups crispy rice cereal
  • 1 1/2 cups chopped pecans
  • 2 cups powdered sugar
  • 34 tablespoons milk (or non-dairy alternative)
  • 1/2 teaspoon vanilla extract

Instructions

  1. Line a large baking sheet with parchment paper. In a large heatproof bowl, combine rolled oats, crispy rice cereal, and pecans.
  2. In a medium saucepan, combine butter, granulated sugar, light brown sugar, and 1/4 cup milk. Heat over medium, stirring constantly until it reaches a vigorous boil, then boil for 1 minute.
  3. Remove from heat, stir in 1 teaspoon vanilla extract, and pour the hot mixture over the oats, rice cereal, and pecans. Stir until well-coated.
  4. Using a cookie scoop, drop rounded spoonfuls onto the prepared baking sheet and shape into mounds.
  5. Refrigerate for at least 30 minutes or until bites are firm.
  6. In a medium bowl, whisk powdered sugar, 3 tablespoons milk, and 1/2 teaspoon vanilla extract until smooth. Adjust consistency with more milk if needed.
  7. Drizzle or spoon the glaze over the bites, let set, and enjoy.

Notes

Store in an airtight container at room temperature for up to a week. These bites can also be frozen for up to 3 months.
