Ingredients

  • 1 cup all-purpose flour
  • 1/4 cup powdered sugar
  • 1/2 cup butter, softened
  • 1 cup pecans, chopped
  • 1/2 cup corn syrup
  • 1/2 cup brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a muffin tin.
  2. In a mixing bowl, combine the all-purpose flour and powdered sugar. Cut in the softened butter until the mixture resembles coarse crumbs.
  3. Press the flour mixture into the bottom of each muffin cup to form a crust.
  4. In another bowl, combine the chopped pecans, corn syrup, brown sugar, eggs, vanilla extract, and salt. Mix until fully incorporated.
  5. Pour the pecan filling into each crust until full, being careful not to overfill.
  6. Bake for 15-20 minutes, or until the filling is set and lightly browned.
  7. Let cool slightly before removing from the muffin tin. Enjoy warm or at room temperature.

Notes

For a richer flavor, toast pecans before adding to the filling. Store in an airtight container for up to 3 days.
