Ingredients

  • 1 cup chopped pecans (toasted for added flavor)
  • 1 cup brown sugar
  • ½ cup granulated sugar
  • ½ cup melted butter
  • 1 cup corn syrup
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • ½ cup self-rising flour (or all-purpose flour mixed with baking powder)

Instructions

  1. Lightly grease the inside of your slow cooker with cooking spray.
  2. In a large bowl, combine the chopped pecans, brown sugar, granulated sugar, melted butter, corn syrup, eggs, vanilla extract, and flour. Stir until well blended.
  3. Pour the pecan mixture into the greased slow cooker, spreading it evenly.
  4. Cover and cook on low for 3–4 hours or until the center is set and slightly puffy.
  5. Check for doneness with a toothpick; it should come out clean.
  6. Once cooked, turn off the slow cooker and let it sit for about 15 minutes before serving.
