Ingredients

Scale
  • 1 cup chopped pecans (lightly toasted)
  • 1/2 cup brown sugar
  • 1/2 cup granulated sugar
  • 1/2 cup unsalted butter (melted)
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1 cup milk
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • Salt (a pinch)

Instructions

  1. Prepare the Slow Cooker: If using a slow cooker, grease the insert. Preheat oven to 350°F (175°C) if baking.
  2. Mix the Toppings: In a large bowl, whisk flour, sugar, baking powder, and a pinch of salt. In a separate bowl, combine melted butter, eggs, milk, and vanilla. Gradually stir this into the dry ingredients until just combined.
  3. Layer in the Dish: Pour half the batter into the slow cooker or greased baking dish. Sprinkle chopped pecans evenly over the top, then pour remaining batter over the pecans.
  4. Create the Gooey Layer: Mix brown sugar with about 1/4 cup hot water until dissolved. Pour this over the batter.
  5. Cook: If using a slow cooker, cover and cook on low for 3-4 hours or high for 2 hours. For oven, bake for 30-35 minutes until golden brown.
  6. Cool and Serve: Allow to cool slightly before serving. Enjoy warm or at room temperature.

Notes

Pairs well with vanilla ice cream or whipped cream. Customize by adding chocolate chips, fruits, or spices.
