  • 1 cup light brown sugar, packed
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 2 cups all-purpose flour

  • 1 teaspoon baking powder
  • 1 1/2 cups chopped pecans
  • Optional: 1/2 cup mini chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Cream the butter, brown sugar, and granulated sugar together in a large bowl until light and fluffy.
  3. Add the eggs and vanilla, mixing until well incorporated.
  4. In a separate bowl, whisk together the flour, salt, and baking powder. Gradually add this dry mix to the wet ingredients, stirring until just combined.
  5. Fold in the chopped pecans (and chocolate chips, if using), ensuring they’re evenly distributed in the dough.
  6. Scoop the dough onto the prepared baking sheet, spacing the cookies about 2 inches apart.
  7. Bake for 10-12 minutes, or until the edges are slightly golden. Let them cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
