Ingredients

Scale
  • 1 cup unsalted butter
  • 1 cup brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 cup chopped pecans

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, beat butter and brown sugar together until light and fluffy (3-4 minutes).
  3. Add the egg and vanilla extract, mixing until well incorporated (1-2 minutes).
  4. In a separate bowl, whisk together flour and baking soda; gradually add to the butter mixture until just combined.
  5. Fold in chopped pecans.
  6. Scoop rounded tablespoons of dough onto a parchment-lined baking sheet, leaving space between cookies.
  7. Bake for 12-15 minutes until edges are golden and centers look set. Cool on the baking sheet before transferring to a wire rack.

Notes

For best texture, do not overmix the dough. Store cookies in an airtight container at room temperature for up to a week.
