Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup granulated sugar
  • 1/2 cup packed brown sugar
  • 2 large eggs
  • 1/2 cup unsalted butter, melted
  • 1/2 cup chopped pecans
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. In a bowl, whisk together the flour, baking powder, and salt. Set aside.
  3. In another bowl, beat together the granulated sugar, brown sugar, and melted butter until combined.
  4. Add the eggs and vanilla to the sugar mixture, and mix until smooth.
  5. Gradually add the dry ingredients to the wet ingredients, stirring just until combined. Fold in the chopped pecans.
  6. Scoop the batter into the prepared muffin tin, filling each liner about 2/3 full.
  7. Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean. Allow to cool before serving.

Notes

Store leftovers in an airtight container for up to 3 days. Freeze baked cupcakes in a sealed container for up to 3 months.
