Ingredients

  • 1 cup pecans, roughly chopped
  • 1 box yellow cake mix
  • 1/2 cup unsalted butter, melted
  • 1 cup brown sugar
  • 1 cup corn syrup
  • 4 large eggs
  • 1 tsp vanilla extract

Instructions

  1. Prepare your cooking appliance by lightly greasing the interior.
  2. In a bowl, mix together the eggs, brown sugar, corn syrup, and vanilla extract until well combined.
  3. Pour half of the chopped pecans into the bottom of the greased cooker or baking dish.
  4. Layer the cake mix on top, followed by the egg mixture.
  5. Drizzle the melted butter over the top.
  6. Sprinkle the remaining chopped pecans on top.
  7. If using a slow cooker, cover and cook on low for 3-4 hours. If using an oven, preheat to 350°F (175°C) and bake for 30-35 minutes, or until golden and set.
  8. Allow to cool slightly before serving with a scoop of vanilla ice cream or whipped cream.

Notes

Store leftovers in an airtight container in the fridge for up to 3 days. Can be frozen unbaked for up to 2 months.
