Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Grease a 12-cup muffin tin with non-stick spray or line with paper liners.
  3. In a large mixing bowl, whisk together the flour, brown sugar, granulated sugar, baking powder, baking soda, and salt.
  4. In a separate bowl, whisk together the melted butter, eggs, vanilla extract, and optional maple syrup.
  5. Fold the wet ingredients into the dry ingredients until just combined.
  6. Gently fold in the chopped pecans.
  7. Divide the batter among the muffin cups, filling each about 3/4 full.
  8. Bake for 18–20 minutes, or until a toothpick inserted into the center comes out clean.
  9. Let cool for a few minutes before transferring to a wire rack.
