Ingredients

  • 1 cup brown sugar
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • 2 large eggs
  • ½ cup milk
  • ¼ cup unsalted butter, melted
  • 1 cup chopped pecans
  • 1 tsp vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and line a 12-cup muffin tin with liners.
  2. In a large bowl, whisk together the flour, brown sugar, baking powder, baking soda, and salt.
  3. In another bowl, mix the eggs, milk, melted butter, and vanilla extract until well combined.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined (don’t overmix).
  5. Fold in the chopped pecans gently.
  6. Spoon the batter into the prepared muffin tins, filling each about two-thirds full.
  7. Bake for 15-20 minutes, or until a toothpick inserted into the center comes out clean.
  8. Let them cool for a few minutes in the pan before transferring to a wire rack.

Notes

For best results, store in an airtight container for up to 3 days. You can also freeze muffins for up to 3 months.
