  • 1 cup pecans, chopped
  • 1/2 cup maple syrup
  • 2 cups almond milk (or milk of choice)
  • 1/4 cup brown sugar
  • 1 tsp vanilla extract
  • 1 tsp ground cinnamon
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • Optional toppings: Whipped cream or additional maple syrup

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large mixing bowl, combine rolled oats, chopped pecans, brown sugar, cinnamon, baking powder, and salt. Mix well.
  3. In a separate bowl, whisk together almond milk, maple syrup, and vanilla extract until blended.
  4. Pour the wet ingredients into the dry ingredients, stirring until everything is evenly coated.
  5. Transfer the mixture to a greased 8×8-inch baking dish (or lightly greased slow cooker) and spread it out evenly.
  6. Bake in the oven for 30-35 minutes, until the edges are golden and the center is set. (If using a slow cooker, cook on low for about 2-3 hours.)
  7. Allow to cool slightly before serving with optional toppings.

Notes

Store leftovers in an airtight container in the fridge for up to 5 days. You can make it vegan by using plant-based milk.
