  • 1 cup light corn syrup
  • 1 cup brown sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1 unbaked pie crust

Instructions

  1. Grease the slow cooker insert with butter or non-stick spray.
  2. In a bowl, whisk together the corn syrup, brown sugar, eggs, vanilla extract, and optional cinnamon until smooth.
  3. Fold in the pecan halves until fully coated with the mixture.
  4. Pour the pecan mixture into the raw pie crust, ensuring it’s evenly spread.
  5. Cover with a clean kitchen towel and cook on low for about 4 hours.
  6. Check for doneness; the filling should be set around the edges but slightly jiggly in the center. Let it cool to firm up.
