  • 1 cup corn syrup (light or dark)
  • 3 large eggs
  • 1 cup brown sugar
  • ¼ cup unsalted butter, melted

  • 1 pie crust (store-bought or homemade)

Instructions

  1. Grease the bottom and sides of your slow cooker with cooking spray or butter.
  2. In a mixing bowl, combine the corn syrup, eggs, brown sugar, melted butter, vanilla extract, and salt. Whisk until smooth.
  3. Stir in the chopped pecans until evenly distributed throughout the mixture.
  4. Line a pie dish with the crust and gently press it into the dish.
  5. Carefully pour the pecan mixture into the pie crust, spreading it evenly.
  6. Cover and cook on low for 4-5 hours or until the filling is set and slightly jiggly in the center.
  7. Allow the pie to cool for at least 2 hours before slicing.

Notes

Substitute maple syrup for corn syrup for a deeper flavor. Add spices like cinnamon for extra warmth.
