Ingredients

  • 2 cups all-purpose flour
  • 1 cup brown sugar
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup buttermilk
  • 2 large eggs
  • 1/2 cup unsalted butter, melted
  • 1 cup chopped pecans, toasted
  • 1 teaspoon vanilla extract

Instructions

  1. Lightly grease your slow cooker insert with cooking spray or line with parchment paper.
  2. In a large bowl, whisk together the flour, brown sugar, baking soda, and salt until combined.
  3. In another bowl, mix together the buttermilk, eggs, melted butter, and vanilla extract until well blended.
  4. Gradually add the wet ingredients to the dry ingredients, stirring gently until just combined.
  5. Gently fold in the chopped pecans into the batter.
  6. Pour the batter into the prepared slow cooker. Cover and cook on low for 3-4 hours, or until a toothpick comes out clean.
  7. Once done, turn off the slow cooker and let the bread cool in the insert for about 30 minutes. Invert the bread onto a plate and serve warm!

Notes

For an extra indulgence, consider serving with cream cheese spread, caramel sauce, or alongside fresh fruit.
