Ingredients

Scale
  • 1 cup unsalted butter, softened
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 cup pecans, finely chopped
  • 1/2 teaspoon salt
  • Optional: additional vanilla or chocolate chips

Instructions

  1. Cream together the softened butter and powdered sugar in a large mixing bowl until light and fluffy (about 3-4 minutes).
  2. Add the vanilla extract and mix until incorporated.
  3. In a separate bowl, whisk together the flour and salt, then gradually add to the creamed mixture, mixing until just blended.
  4. Fold in the finely chopped pecans until evenly distributed.
  5. Roll the dough into 1-inch balls and place them on a lined baking sheet, spacing them about 2 inches apart.
  6. For a firmer texture, chill the dough in the refrigerator for 30 minutes before baking.
  7. Preheat your oven to 350°F (175°C) and bake for 12-15 minutes, until the edges are lightly golden. Let cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

Notes

Store in an airtight container for up to a week. You can freeze the dough balls for fresh baking later.
