Ingredients

  • Good quality bread (sourdough or whole wheat)
  • Mozzarella cheese (or cheddar, provolone, gouda)
  • Pesto (store-bought or homemade)
  • Butter or olive oil

Instructions

  1. Prep your ingredients: Lay out your chosen bread, cheese, and pesto.
  2. Spread the pesto on one side of each slice of bread.
  3. Add cheese: Place a slice of cheese on the pesto side of one slice and top with another slice, pesto side facing in.

  6. Flip the sandwich and cook for another 3-4 minutes until the cheese is melted and the other side is crisp.
  7. Remove from skillet, slice in half, and serve immediately.
