Ingredients

Scale
  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 cup packed brown sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 3 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup crushed pineapple, drained
  • Optional: 1 cup chopped nuts (walnuts or pecans) or chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Cream the butter and sugars together in a large mixing bowl until light and fluffy, about 3-4 minutes.
  3. Add eggs and vanilla to the butter mixture, blending until fully incorporated.
  4. In a separate bowl, whisk together the flour, baking soda, and salt.
  5. Gradually mix the dry ingredients into the wet ingredients, stirring until just combined.
  6. Fold in the crushed pineapple and any optional mix-ins like nuts or chocolate chips.
  7. Drop tablespoon-sized scoops of dough onto the prepared baking sheet, spacing them about 2 inches apart.
  8. Bake for 12-15 minutes or until the edges are golden.

Notes

Use fresh pineapple for a more vibrant flavor. You can reduce granulated sugar to ¾ cup if desired.
