Ingredients

  • 1 cup crushed pineapple, drained
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • Optional: 1/2 cup shredded coconut or nuts

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Line a baking sheet with parchment paper.
  3. Cream together softened butter, granulated sugar, and brown sugar in a mixing bowl until smooth and fluffy.
  4. Beat in the egg and vanilla extract until well incorporated.
  5. Fold in the crushed pineapple.
  6. Whisk together flour, baking soda, and salt in a separate bowl; gradually mix into the wet ingredients until just combined.
  7. Drop balls of dough onto the prepared baking sheet, spacing them about 2 inches apart.
  8. Bake for 10-12 minutes or until golden brown around the edges. Allow to cool slightly before transferring to a wire rack.
