  • 1 cup granulated sugar
  • 2 eggs
  • 2 cups all-purpose flour
  • 1 cup crushed pineapple, drained
  • 1 teaspoon baking soda
  • 1 teaspoon vanilla extract
  • 1 cup shredded coconut (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, cream together the softened butter and sugar until light and fluffy.
  3. Add eggs and vanilla extract, mixing until combined.
  4. In another bowl, whisk together flour and baking soda, then gradually blend into the wet mixture.
  5. Fold in crushed pineapple and optional coconut until evenly distributed.
  6. Drop rounded tablespoons of dough onto a lined baking sheet, spaced about 2 inches apart.
  7. Bake for 12-15 minutes or until edges are golden and centers are slightly set.
  8. Cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

Notes
