1 cup brown sugar, packed
1/2 cup granulated sugar
2 large eggs
1 teaspoon vanilla extract
2 cups all-purpose flour
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1 cup crushed pineapple, drained
1/2 cup shredded coconut (optional)
1/2 cup chopped nuts (optional)
Instructions
Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
In a large mixing bowl, beat together the softened butter, brown sugar, and granulated sugar until light and fluffy (about 2-3 minutes).
Mix in the eggs one at a time, and stir in the vanilla extract until combined.
In a separate bowl, whisk together the flour, baking powder, baking soda, and salt.
Gradually add the dry mixture to the wet ingredients, mixing until just combined. Fold in the crushed pineapple, coconut, and nuts if using.
Drop rounded tablespoons of dough onto the prepared baking sheets, about 2 inches apart. Bake for 12-15 minutes, or until the edges are lightly golden.
Remove from the oven and allow the cookies to cool on the baking sheets for a few minutes before transferring to wire racks.
Notes
Drain the pineapple well to avoid soggy cookies. Chill the dough if it’s too soft.
