Ingredients

  • 1 cup unsalted butter, softened
  • 1 cup sugar (or brown sugar)
  • 2 large eggs
  • 1 cup crushed pineapple, drained
  • 2 cups all-purpose flour (or gluten-free flour)
  • 1 teaspoon baking soda
  • 1 teaspoon vanilla extract
  • Optional: ½ cup shredded coconut or nuts

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cream together the softened butter and sugar until pale and fluffy.
  3. Add eggs one at a time, mixing well after each addition and then add vanilla extract.
  4. Gently fold in the crushed pineapple until well mixed.
  5. In a separate bowl, whisk together the flour and baking soda, then gradually add to the wet mixture until just combined.
  6. If using, fold in the shredded coconut or nuts.
  7. Drop spoonfuls of dough onto a greased or lined baking sheet, spacing them about 2 inches apart.
  8. Bake for 12-15 minutes or until the edges are golden brown.

Notes

Serve warm or with a scoop of vanilla ice cream. To customize, swap pineapple for other fruits or add chocolate chips.
