Ingredients

  • 2 cups crushed pineapple, drained
  • 1 ½ cups cream cheese, softened
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 3 large eggs
  • 1 cup sour cream
  • 1 cup crushed graham crackers (for the crust)
  • ½ cup melted butter
  • ¼ cup shredded coconut (optional)

Instructions

  1. Line the slow cooker with parchment paper for easy removal.
  2. In a mixing bowl, combine the crushed graham crackers and melted butter. Press this mixture into the bottom of the lined slow cooker.
  3. In another bowl, beat the cream cheese, sugar, and vanilla until smooth. Add the eggs one at a time, mixing well after each addition. Stir in the sour cream and crushed pineapple.
  4. Carefully pour the cream cheese mixture over the crust in the slow cooker.
  5. Cover and cook on low for 4-5 hours, until set but slightly jiggly in the center.
  6. Turn off the slow cooker and let the cheesecake cool for at least 1 hour before refrigerating for at least 3 hours or overnight.
  7. Once chilled, remove the cheesecake from the slow cooker using the parchment paper. Slice and enjoy!

Tip: Ensure cream cheese is at room temperature for a smooth mixture. Use fresh pineapple for the best flavor.
