Instructions

  1. Preheat your oven to 350°F (175°C). In a 9-inch round cake pan, melt the butter over low heat, then remove from heat and sprinkle the brown sugar evenly over the melted butter.
  2. Drain the pineapple slices and arrange them in a single layer, top side down, over the brown sugar mix in the pan. Place a maraschino cherry in the center of each pineapple ring.
  3. In a separate bowl, combine the flour, granulated sugar, baking powder, and a pinch of salt. In another bowl, whisk together the milk, vegetable oil, eggs, and vanilla. Gently fold the wet ingredients into the dry until just combined.
  4. Carefully pour the batter over the arranged pineapples in the cake pan, ensuring that each fruit slice remains visible beneath the surface.
  5. Bake for 35-40 minutes, or until a toothpick comes out clean and the cake is golden brown.
  6. Allow to cool for about 10 minutes in the pan, then gently run a knife around the edges and flip onto a serving plate.
  7. Allow the cake to cool to room temperature or serve warm with whipped cream or ice cream.
