  • 1 box of white cake mix
  • 1 cup of shredded coconut (unsweetened)
  • 1/2 cup of vegetable oil
  • 3 eggs
  • 1 teaspoon of almond extract
  • 1/2 teaspoon of pink food coloring
  • Powdered sugar for dusting

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9×13 inch baking pan.
  2. In a large bowl, combine the white cake mix, vegetable oil, eggs, almond extract, and pink food coloring. Mix until well combined and smooth.
  3. Gently fold in 3/4 cup of shredded coconut into the batter until evenly distributed.
  4. Pour the batter into the prepared baking pan and spread it evenly. Bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean.
  5. Allow the cake to cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.
  6. Once the cake is cool, cut it into bars. Roll each bar in the remaining shredded coconut, ensuring it’s coated nicely.
  7. For a finishing touch, dust powdered sugar over the top before serving.
