Ingredients

Scale
  • 1 cup unsweetened cocoa powder
  • 1 cup all-purpose flour
  • 1 ½ cups granulated sugar
  • ½ cup unsalted butter, melted
  • 3 large eggs, beaten
  • 1 teaspoon vanilla extract
  • ½ teaspoon baking powder
  • ½ teaspoon salt
  • 1 cup shelled pistachios, roughly chopped
  • Optional: ½ cup chocolate chips

Instructions

  1. Prepare your slow cooker: Lightly grease the slow cooker insert with cooking spray or line it with parchment paper.
  2. Mix dry ingredients: In a mixing bowl, whisk together cocoa powder, flour, sugar, baking powder, and salt until combined.
  3. Combine wet ingredients: In a separate bowl, mix melted butter, eggs, and vanilla extract until smooth.
  4. Combine mixtures: Pour the wet ingredients into the dry ingredients and stir until just combined. Gently fold in the chopped pistachios and chocolate chips if using.
  5. Transfer to slow cooker: Pour the brownie batter into the prepared slow cooker, spreading it evenly.
  6. Cook: Cover and cook on high for 120 to 150 minutes or until a toothpick inserted in the center comes out with a few moist crumbs.
  7. Cool and serve: Once cooked, turn off the slow cooker and allow the brownies to sit for about 15 minutes before slicing. Serve warm or at room temperature.

Notes

For a richer flavor, consider using dark cocoa powder. Feel free to customize with your favorite mix-ins.
