Ingredients

  • 1 cup unsalted pistachios, shelled and finely ground
  • 1 ½ cups all-purpose flour
  • 1 cup granulated sugar
  • ½ cup unsalted butter, softened
  • 2 large eggs
  • 1 cup milk
  • 2 teaspoons baking powder
  • 1 teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. Grease the inside of your slow cooker with butter or cooking spray.
  2. In a bowl, combine the flour, ground pistachios, baking powder, and salt. Mix well.
  3. In a separate large bowl, beat the softened butter and sugar together until creamy.
  4. Mix in the eggs, milk, and vanilla extract until well combined.
  5. Gradually add the dry ingredient mixture to the wet mixture, stirring until just combined.
  6. Transfer the batter into the prepared slow cooker, smoothing it out evenly.
  7. Cover and cook on high for about 2 to 2.5 hours or until a toothpick inserted in the center comes out clean.

Notes

For a less sweet cake, reduce the sugar. Can substitute almond extract for vanilla.
