Ingredients

  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • ¼ cup granulated sugar
  • 2 (8-ounce) packages cream cheese, softened
  • ¾ cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup brown sugar
  • ¼ cup heavy cream
  • 1 cup chopped pecans
  • ½ teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine graham cracker crumbs, melted butter, and granulated sugar. Press this mixture into the bottom of a greased 9×13-inch baking dish and bake for 10 minutes.
  3. Beat softened cream cheese in a large bowl until smooth. Gradually add sugar, mixing well. Add eggs one at a time, beating after each, then stir in vanilla until smooth.
  4. Pour cheesecake mixture over cooled crust and bake for 25-30 minutes. Let cool, then refrigerate for at least 2 hours.
  5. In a saucepan, combine brown sugar, heavy cream, and salt over medium heat. Stir until smooth and simmer for 3-5 minutes. Remove from heat and stir in pecans.
  6. Pour praline caramel over the set cheesecake and let sit at room temperature for 30 minutes before refrigerating for an additional hour.
  7. Slice into squares and serve cold.

Notes

Avoid overbaking to keep the cheesecake creamy. Store leftovers in an airtight container for up to a week.
