Ingredients

  • 1 cup of pumpkin puree (canned or fresh)
  • 1 cup of sugar
  • 1/2 cup of butter, softened
  • 2 cups of all-purpose flour
  • 1 teaspoon of baking powder
  • 1 teaspoon of baking soda
  • 1 teaspoon of cinnamon
  • 1/2 teaspoon of nutmeg
  • 1/2 teaspoon of salt
  • 1 teaspoon of vanilla extract
  • Optional: 1 cup of chocolate chips or chopped nuts

Instructions

  1. Preheat your oven to 350ยฐF (175ยฐC).
  2. In a large mixing bowl, cream together the softened butter and sugar. Add pumpkin puree and vanilla extract, mixing well until combined.
  3. In a separate bowl, whisk together flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
  4. Gradually add the dry ingredients to the wet mixture, stirring until just combined. If desired, fold in chocolate chips or nuts.
  5. Using a cookie scoop or spoon, drop tablespoons of dough onto a parchment-lined baking sheet.
  6. Bake in the preheated oven for about 12-15 minutes or until the edges are lightly golden.
  7. Allow cookies to cool on the baking sheet for a few minutes before transferring to a wire rack.

Notes

For a deeper flavor, use fresh pumpkin puree. Adjust spices to fit your preference.
