Ingredients

  • 1 cup pumpkin puree
  • 1/2 cup sugar
  • 1/4 cup brown sugar
  • 2 eggs
  • 1/4 cup vegetable oil
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon pumpkin pie spice
  • 1/2 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a donut pan.
  2. In a large mixing bowl, combine the pumpkin puree, sugar, brown sugar, eggs, oil, and vanilla extract. Mix until smooth.
  3. In a separate bowl, whisk together the flour, baking powder, pumpkin pie spice, and salt.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  5. Pour the batter into the prepared donut pan, filling each cavity about 2/3 full.
  6. Bake for 12-15 minutes or until a toothpick inserted into the center comes out clean.
  7. Allow to cool for a few minutes in the pan before transferring to a wire rack.

Notes
