Ingredients

  • 1 cup pumpkin puree
  • 1/2 cup unsweetened applesauce
  • 1/2 cup brown sugar
  • 1/2 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 cup rolled oats
  • 1 ½ cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon pumpkin pie spice
  • 1/2 teaspoon salt
  • Optional: 1/2 cup chocolate chips or nuts

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, combine pumpkin puree, applesauce, brown sugar, granulated sugar, and vanilla extract. Mix until smooth.
  3. In a separate bowl, whisk together the rolled oats, flour, baking soda, pumpkin pie spice, and salt.
  4. Gradually add the dry ingredients to the pumpkin mixture, stirring until just combined. If desired, fold in chocolate chips or nuts.
  5. Use a cookie scoop or tablespoon to drop dough onto the prepared baking sheet, spacing them about 2 inches apart.
  6. Bake in the preheated oven for 12–15 minutes, or until the edges are golden and the centers look just set.
  7. Let the cookies cool for a few minutes on the baking sheet before transferring them to a wire rack to cool completely.

Notes

For thicker cookies, chill the dough in the refrigerator for 30 minutes before baking. Store in an airtight container for up to a week.
