Ingredients

  • 1 can (15 oz) pumpkin puree
  • 1 cup oats
  • 1 cup brown sugar
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon salt
  • 1/2 cup chopped nuts (optional)
  • 1 cup milk
  • 1/2 cup vegetable oil

Instructions

  1. Grease the inside of your slow cooker with cooking spray or butter.
  2. In a large bowl, combine oats, brown sugar, baking powder, cinnamon, nutmeg, and salt.
  3. Stir in pumpkin puree, milk, and vegetable oil until well combined.
  4. Pour the mixture into the greased slow cooker and spread evenly.
  5. Cover and cook on low for 4 hours or on high for 2 hours, until set.
  6. Once cooked, let it cool for a few minutes and serve warm!

Notes

Feel free to customize with nuts or chocolate chips. Store leftovers for up to 5 days.
