  • ½ cup brown sugar, packed
  • ½ cup rolled oats
  • ½ cup unsalted butter, melted
  • 1 teaspoon cinnamon

  • 1 can (15 oz) pumpkin puree
  • ¾ cup sweetened condensed milk
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon pumpkin pie spice
  • ½ teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×9-inch baking pan.
  2. In a medium bowl, combine flour, brown sugar, oats, cinnamon, and salt. Stir in melted butter until the mixture resembles coarse crumbs. Reserve 1 cup for topping.
  3. Press the mixture into the bottom of the prepared pan evenly to form a crust.
  4. In a large bowl, whisk together the pumpkin puree, sweetened condensed milk, eggs, vanilla, pumpkin pie spice, and salt until smooth.
  5. Spread the filling evenly over the crust in the pan.
  6. Sprinkle the reserved crumble mixture over the pumpkin filling.
  7. Bake for 30-35 minutes or until the filling is set and the topping is golden brown. Let it cool completely before cutting into squares.
