Instructions

  1. Preheat your oven to 375°F (190°C) and line a 15×10-inch baking pan with parchment paper.
  2. In a large bowl, combine pumpkin puree, eggs, and granulated sugar. Beat until smooth.
  3. In a separate bowl, mix flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
  4. Gradually mix the dry ingredients into the wet ingredients until just combined.
  5. Pour the batter into the prepared pan, spreading it evenly. Bake for 15-20 minutes or until a toothpick comes out clean.
  6. Remove from oven and, while still warm, flip the cake onto a clean kitchen towel dusted with powdered sugar. Roll it up tightly and let it cool completely.
  7. To make the frosting, beat cream cheese, butter, powdered sugar, brown sugar, and vanilla until smooth.
  8. Unroll the cooled cake carefully, spread the frosting evenly, and roll it back up. Slice and serve!
