Ingredients

  • 2 ½ cups all-purpose flour
  • 1 cup unsalted butter, cold and cubed
  • ½ teaspoon salt
  • 1 tablespoon sugar
  • 68 tablespoons ice water
  • 1 can (15 oz) pumpkin puree
  • 1 cup brown sugar
  • 1 cup heavy cream
  • 3 large eggs
  • 2 teaspoons pumpkin pie spice
  • ½ teaspoon vanilla extract

Instructions

  1. Prepare the crust: In a mixing bowl, combine flour, salt, and sugar. Add butter and mix until crumbly.
  2. Add water gradually until the dough holds together. Wrap and chill for 30 minutes.
  3. Preheat your oven to 375°F (190°C).
  4. Make the filling: Whisk pumpkin puree, brown sugar, cream, eggs, spices, and vanilla until smooth.
  5. Roll out the crust to fit a rectangular baking sheet, about â…› inch thick.
  6. Pour the filling into the crust and smooth evenly.
